Three Bars That Serve Tradicional Brazilian Appetizers

Traditional Brazilian recipes that became dumplings' fillings.

1. Aconchego Carioca
Chef Katia Barbosa prepares Pê-efinho —a dumpling made of beans, stuffed with rice and quail egg. The São Paulo unit is an echo of nightlife in Rio de Janeiro North Zone, where the parent bar is located. The menu lists other meals. Her business partner Edu Passarelli, a specialist in beers, has assembled a list of around 200 brands.

2. Bar da Dona Onça
In the bar located in Copan building, chef Janaina Rueda's nuggets are stuffed with dobradinha (tripe). Crisp sardines and a pan of curried seafood are a good bet to go with passion fruit caipirinha with tangerine.

3. Leão da Terra
Inside chef Greigor Casley's coxinha, there is osso buco instead of shredded chicken. A bar specializing in boutique beers, with around 150 brands —they are grouped in the freezer cabinets according to strength (bitterness and alcohol content). The menu, by Australian Greigor Caisley (Twelve Bistro), has deep-fried breaded ossobuco dumplings. On Fridays and Saturdays there is live pop/rock.
